Recently I found some mini mozzarella (or bocconcini) in the grocery store and made some mini Caprese salad on a stick. I couldn’t believe they turned out so tasty and are so easy to make! Simply get all your ingredients ready and thread them through some skewers. Voilà, you’ve got some fancy looking appetizers ready for entertaining.

Making Mini Caprese Salad Appetizer on a Stick

Caprese Salad Appetizer on a stick recipe Since this is a “mini” Caprese, we need the small version of the ingredients found in regular Caprese salads, which are: tomatoes, mozzarella and basil. For the tomatoes, you can use cherry or grape tomatoes. Instead of sliced mozzarella, use mini mozzarella or bocconcini. For the basil, I looked for younger leaves which are smaller in size. If you have larger basil leaves, simply cut them smaller so the skewers will look more uniformed. The other ingredients you’d need are extra virgin olive oil, salt, and pepper.

Variation – Mini Mozzarella & Prosciutto Appetizer

I like this version because the salty cured meat goes well with the mini mozzarella. Besides this, you can also use melons or marinated tofu. Free free to try out different combinations! This Caprese Salad made with mini mozzarella (or bocconcini), grape tomatoes and fresh basil are a great addition to your party menu. To make ahead, simply thread all your ingredients together and keep the skewers in the fridge. When ready to serve, drizzle with olive oil and season with salt and pepper.

Ingredients
Ingredients for Caprese Salad:
  • mini mozzarella (or bocconcini)
  • cherry or grape tomatoes
  • fresh basil
  • extra virgin olive oil for drizzling
  • sea salt + pepper, to taste
Ingredients for Mozzarella + Prosciutto Appetizer:
  • mini mozzarella (or bocconcini)
  • prosciutto, thinly sliced
  • fresh basil
  • sea salt + pepper
Instructions
For the Caprese Salad:
  1. Thread 1 mini mozzarella ball on a skewer, follow with a piece of basil leaf and lastly the cherry or grape tomato. Repeat with remaining ingredients and store the skewers in the fridge. When ready to serve, drizzle extra virgin olive oil onto the skewers and season with salt and pepper to taste.

For the Mozzarella + Prosciutto Appetizer:
  1. Cut the prosciutto slices length wise. Roll up one piece of prosciutto, thread it onto a skewer and follow with a piece of basil leaf and a piece of mozzarella cheese. Repeat with remaining ingredients and store the skewers in the fridge. Season the cheese lightly with sea salt and pepper before serving.

Recipe Notes

  • Serving: I generally allow 2-3 pieces per person if serving this as an appetizer. This helps me determine how many mini mozzarella and other ingredients I need to buy. Just keep in mind that you'd need 1 mozzarella, 1 tomato and 1 basil per skewer.
  • If you don't have mini mozzarella ball or bocconcini, you can cut up pieces of fresh mozzarella and it'd taste just as delicious!
  • Try making this with different cured meats such as salami or chorizo. For something sweet and savory, you can try making the mozzarella skewers with strawberries or melon pieces and use balsamic reduction instead of the olive oil.
