I believe everyone should have a banana bread recipe in their repertoire. It’s such an easy and delicious quick bread for breakfast or afternoon snack. Here is one of my favourite banana bread recipe and I’m going to show you how to present it in two different ways.
When I invite people over for breakfast, my go-to dish is usually a nice stack of fluffy buttermilk pancakes. They are quick to make and are so versatile. Serve them savoury with pulled pork or crispy fried chicken, or sweet with fruits, jams or whatever you fancy. In this recipe, I’m topping my stack of fluffy buttermilk pancakes with cinnamon apples and crispy oats.
Cooking for a group can be a bit daunting. So when I had to make something for a group of 20+ co-workers during our “12 Days of Baking/Cooking” event, I decided to make mini buttermilk pancakes stacks. Most of us start early so a breakfast item is always nice, plus these mini pancakes on a stick are pretty easy to eat (no plates required). Plus, these can be prepared ahead of time, then assemble before serving. Oh, and did I mention that strawberries + Nutella is a super yummy combination?! I’ve never had Nutella prior to making this recipe and now I want to eat Nutella straight out of the jar by the spoonful.
Back in my university days, I did a co-op term in Ottawa. It was my first time living away from home for an extended period. During this time, I learned how to cook simple meals for one. But making breakfast is not easy for me as I’d prefer to get sleep more instead. So my coworker shared with me this apple cinnamon bran muffins recipe for a grab-and-go breakfast. At first, I was a bit skeptical because I hated bran cereal. In my mind, I had imagined these would be dry and taste like cardboard. However, I ended up loving these muffins! They were moist, with chunks of apples and cinnamony flavours. Even the picky Mr. Chau likes them for breakfast or snack! This recipe is definitely a keeper so I hope you’d give it a try too.
