Cooking for a group can be a bit daunting. So when I had to make something for a group of 20+ co-workers during our “12 Days of Baking/Cooking” event, I decided to make mini buttermilk pancakes stacks. Most of us start early so a breakfast item is always nice, plus these mini pancakes on a stick are pretty easy to eat (no plates required). Plus, these can be prepared ahead of time, then assemble before serving. Oh, and did I mention that strawberries + Nutella is a super yummy combination?! I’ve never had Nutella prior to making this recipe and now I want to eat Nutella straight out of the jar by the spoonful.

While I love making this dish, I was trying to come up with a way to present this in a different way. I usually make apple crumble in a large baking dish. So I tried making individual apple crumble with small ramekins. Then I had an idea, what if I replace the small ramekins with an edible cup? The light bulb lit up and this is how my apple crumble baked in apple cups were born. I’m sure this is not a new idea but I was so excited when I thought of the idea. Back in my university days, I did a co-op term in Ottawa. It was my first time living away from home for an extended period. During this time, I learned how to cook simple meals for one. But making breakfast is not easy for me as I’d prefer to get sleep more instead. So my coworker shared with me this apple cinnamon bran muffins recipe for a grab-and-go breakfast. At first, I was a bit skeptical because I hated bran cereal. In my mind, I had imagined these would be dry and taste like cardboard. However, I ended up loving these muffins! They were moist, with chunks of apples and cinnamony flavours. Even the picky Mr. Chau likes them for breakfast or snack! This recipe is definitely a keeper so I hope you’d give it a try too.
